I am honored to be the first to post on the Clagget blog! The pictures are great. But as anyone who has come to the farm knows, nothing beats that first vista that opens up as you round the corner by the sunflowers. Now THAT is a piece of heaven!
Someone asked me what I did with the wonderful, striped tomatoes. I heard that they were good to stuff, so here's what I tried:
Cut off the top of the tomatoes. Use a spoon to scoop out the insides, leaving a substantial shell. Chop up together: the tomato innards, cucumber, onion. Mix tuna, mayo lemon juice, and added it to the veg mixture. Salt and pepper to taste. Stuff it all into the hollowed tomatoes and garnish with capers. Elegant and tasty!
ps- the watermelon I got today in my workshare is the sweetest, pinkest melon I've ever had!
