Several of you asked me about arugula. I love it in various salads, but the link below will take you to an arugula recipe with mashed potatoes and goat cheese that I would like to try soon.

Yep - that second recipe is better. Its the lemon that does it for me. Great combination.

We tried a recipe, also on epicurious, for arugula pesto -- also not impressed. I searched in vain for salad recipes -- this one looks good.
